Two favorite Sandwiches to go // Zwei Knaller-Sandwiches zum Einpacken

As someone who is always on the move I learned to appreciate good provisions. Of course there are several options to buy some food on a trip but first it’s kind of expensive and second you can’t always get what you want. I remember lots of car trips and rest stops where I just couldn’t find anything I liked except for a chocolate bar and that isn’t satisfying at all. I love sandwiches but not the premade ones you can buy. They just don’t taste like the ones you make at home. That’s why today I’ll show you two of my favorite sandwiches that are perfect to prepare and taking them with you.

Als jemand, der viel unterwegs ist, habe ich einen guten Proviant in meiner Tasche zu schätzen gelernt. Natürlich kann man sich unterwegs immer auch etwas zu Essen kaufen, aber erstens ist das meistens teuer und zweitens kriegt man nicht immer das, was man gerne hätte. Ich kann mich an viele Situationen erinnern, in denen ich – vor allem auf Autobahnraststätten – außer einem Schokoriegel nichts finden konnte, was mir gefiel. Und das ist frustrierend. 
Ich liebe Sandwiches – aber keine fertigen. Sie sind schlabberig und der Belag ist auch nicht mein Ding. Nichts geht über ein selbstgemachtes Sandwich, oder? Deshalb habe ich euch zwei meiner liebsten Varianten, die sich super vorbereiten und mitnehmen lassen, mitgebracht.

What you need:
2 big slices of bread

1 tbsp cream cheese

1 handful baby spinach

30 g crumbled feta cheese
1/2 avocado in slices

2 handful basil leaves

1 tbsp pine nuts

2 tbsp grated parmesan

Olive oil 

1 ball mozzarella

1 big tomato

salt and pepper

2 pieces sandwich paper

some kitchen string

a toaster

a food chopper or moral and pestle


Was ihr braucht:
2 große Scheiben frisches Brot
1 EL Frischkäse
1 Handvoll Babyspinat
30 g zerbröselter Feta
1/2 kleine Avocado in Scheiben
2 Handvoll Basilikumblätter
1 EL Pinienkerne
2 EL geriebener Parmesan
Olivenöl
1 Kugel Mozzarella
1 Tomate
Salz und Pfeffer
2 Blätter Butterbrotpapier
etwas Küchengarn
einen Toaster
einen Blitzhacker oder einen Mörser

Instructions

Toast the bread in a toaster and leave to cool.

For the spinach sandwich:

Spread the creme cheese on one slice of the bread. Put the spinach and the avocado on it and top with the feta cheese. Add salt and pepper to taste and put the second slice of bread on top.


For the caprese-sandwich:

Take the basil leaves, the pine nuts and a dash of olive oil to make a pesto using a food chopper or mortar and pestle. Add the parmesan and as much olive oil as needed for a creamy texture. Add salt and pepper to taste. 
Cut the mozzarella and the tomato in slices. Spread the pesto on both slices of bread. Layer the mozzarella and the tomato on top and fold. 


Wrap the sandwiches in sandwich paper and tie up with the kitchen string.

Anleitung:

Die Brotscheiben toasten und abkühlen lassen.

Für das Spinat-Sandwich:

Eine Brotscheibe mit dem Frischkäse bestreichen. Den Babyspinat und die Avocado darüber schichten und zum Schluss den gebröselten Feta drauflegen. Mit etwas Salz und Pfeffer würzen. Die zweite Brothälfte auflegen.

Für das Caprese-Sandwich:
Die Basilikumblätter zusammen mit den Pinienkernen und einem Schuss Olivenöl in einem Blitzhacker oder mit einem Mörser zu einer Paste verarbeiten. Den Parmesan unterheben und so viel Olivenöl hinzugeben, bis die Masse cremig und streichfähig ist. Mit Salz und Pfeffer abschmecken.
Die Tomate und den Mozzarella in Scheiben schneiden. Beide Brotscheiben mit dem Pesto bestreichen und die Tomaten- und Mozzarellascheiben darauf schichten. Die zweite Scheibe Brot auflegen.

Beide Sandwiches in Butterbrotpapier einschlagen und mit Küchengarn fixieren.
